Soybean Rice with Fresh Coriander

- for frying soya:
- 3 cup water (for boiling)
- ½ tsp salt (for boiling)
- ½ cup soya chunks
- ½ tsp ginger garlic paste
- ½ tsp kashmiri red chilli powder
- ¼ tsp salt
- 2 tbsp oil
- for fried rice:
- 2 tbsp oil
- 2 clove garlic (finely chopped)
- 1 chilli (slit)
- 4 tbsp spring onion (chopped)
- ½ onion (finely chopped)
- ½ carrot (finely chopped)
- 2 tbsp cabbage (finely chopped)
- ½ capsicum (finely chopped)
- 1 tsp chilli sauce
- 2 tbsp vinegar
- 2 tbsp soy sauce
- ½ tsp pepper powder
- 1 tsp salt
- 2 cup cooked rice
HOW TO COOK

Step 1 Rinse & Soak the Basmati Rice
To prepare this delicious dish, rinse the basmati rice and soak them in water for 10 minutes.

Step 2 Soak the Soya Chunks in Hot Water
In another bowl, soak the soya chunks in hot water for 20 minutes. Meanwhile, chop the onion, tomato and green chillies.

Step 3 Saute the Veggies in Spices
Next, in a pan heat some ghee and add the cumin seeds and cloves to it. Then, add the onions, tomatoes, green chillies, cinnamon stick, and bay leaves. Add the peas to the pan. Cook them for a few minutes.

Step 4 Drain the Soya Chunks & Add to the Pan, then Add Curd
Drain the water from the soya chunks, squeeze out excess water and add them to the pan. Saute them for a while. Then, add the hung curd.

Step 5 Add Rice & Turmeric Powder
Next, add the basmati rice and some turmeric powder.

Step 6 Add Water, Salt, Lemon juice & Let the Rice Cook
Now pour in the water and salt as per your taste. Drizzle a few drops of lemon juice on the top. Cover the pan and let the rice cook for 10 minutes.

Step 7 Garnish with Coriander Leaves & Serve Hot
Once done, turn off the flame. Transfer the rice to a serving bowl and garnish it with coriander leaves. Serve with raita.
