Instructions:
- Start by soaking Ashwani soya chunks in hot water for 10 minutes. Drain and squeeze out the excess water.
- In a pan, heat oil and add bay leaf, cinnamon stick, cloves and cardamom pods.
- Once the spices start sizzling, add finely chopped onions and fry until they turn golden brown.
- Once the onion is cooked, add ginger-garlic paste and fry for a minute.
- Add tomatoes to the pan and cook until they become soft and mushy.
- Add cumin powder, coriander powder, turmeric powder, and red chili powder. Stir well to ensure that the spices are evenly distributed.
- Add Ashwani soya chunks and stir well.
- Add salt and 2 cups of water. Bring to a boil.
- Add basmati rice and stir well. Reduce the heat to low and cover the pan.
- Cook on low flame for 18-20 minutes or until the rice is fully cooked.
- Once done, add ghee and mix well.
- Garnish with cilantro and serve hot.
